Winter Melon Adzuki Bean Soup is beneficial for edema, beriberi, nephritis, ascites, leg swelling, athlete’s foot and weight loss.

According to traditional Chinese medicine, both winter melon (white gourd, ash gourd, fuzzy melon) and adzuki bean (small red bean) have diuretic properties. They increase urine output, reduce accumulation of fluids in the body, thus help relieve the symptoms of edema, beriberi, nephritis, ascites, leg swelling and athlete’s foot, and help lose weight as well.

Ingredients:

– Winter melon 800g, remove skin and cut into 1-inch pieces
– Adzuki bean 50g
– 1-2 teaspoons salt (according to your taste)
– 10 cups water

Directions:

– Put winter melon, adzuki beans and water into a large pot
– Bring to a boil, then simmer for 1-2 hours
– Add salt and simmer for 10 minutes
– Eat a bowl of soup, once a day for a week

Please note, this is a strong diuretic soup for reducing fluid retention and swelling. If you have no symptoms of swelling/edema, if you are thin, not overweight, do not eat this soup. This soup has cooling properties, and is not recommended to those who have coldness and deficiency in spleen and stomach.
