Burdock can be eaten as a root vegetable. It is also used as a food therapy to help treat face swelling, dizziness, lung fever, sore throat, toothache and skin boils.

 

Burdock is a popular food in Asia. It is also a herbal medicine in traditional Chinese medicine (TCM). According to TCM, burdock is a diuretic, diaphoretic, and a blood purifying agent. It has effects to expel wind-heat and treat the associated dizziness, fever, swelling and pain. It is used to treat swelling and pain in the throat or teeth, tonsillitis, furuncles, carbuncle, abscess and other inflammation and swelling.

How to eat burdock

Recipe 1: burdock juice

- Fresh burdock root 1 lb.
- Cut into slices
- Use a juicer to extract the juice
- You may add sugar to it
- Drink it warm, twice a day

Recipe 2: burdock tea

- Fresh burdock root 250g
- Water 4 cups
- Sugar (optional, according to the taste)
- Cut burdock root into slices
- Boil and simmer for 20 minutes
- Add sugar
- Drink it 1 cup, twice a day

Recipe 3: burdock pork soup

Ingredients:

- Pork 250g
- Fresh burdock root 250g
- Salt 1 teaspoon (according to the taste)
- Black pepper (according to the taste)
- Water 4 cups

Preparations:

- Wash burdock root, remove the skin, and cut into slices
- Soak the slices in water
- Cut the pork into 1-inch pieces
- Put pork, burdock and water in a pot
- Bring to a boil, simmer 30-60 minutes
- Add salt and black pepper
- Simmer 5 more minutes
- Serve

Burdock is eaten as a food, therefor it is considered safe. But using it to help treat a disease, you should consult a doctor.
