Winter Melon Pork Rib Soup is a popular Chinese summer soup. This soup has cooling and diuretic properties. It is beneficial to reduce summer heat, thirst and dysuria. And it helps relieve heat-stroke, edema, phlegm, sores, hot irritability, blood in stool, hemorrhoids, athlete’s foot, and other symptoms.

Ingredients:

– 1 lb pork ribs, cut into 1-inch pieces
– 1 lb winter melon, remove skin and cut into 1-inch pieces
– 3 slices ginger
– 1-2 teaspoons salt (according to your taste)
– 8-10 cups water

Directions:

– Put pork ribs, ginger and water into a large pot
– Bring to a boil, then simmer for 60 minutes
– Add winter melon, bring to boil again, then simmer for 10 minutes
– Add salt and simmer for another 10 minutes
